I love a good, hearty tomato soup, especially this time of the year. I’ve seen so many good recipes for soups lately and had to give this one a go. This recipe has my favorite pasta, Tortellini; three cheese at that! It’s a smooth and creamy consistency with a delicious jolt of tomato tang and flare.

Ingredients
- 3 cans of Condensed Tomato Soup
- 2 cans of Tomato pasta
- Diced Tomatoes (optional)
- 1/2 cup of heavy whipping cream/heavy cream
- 1 cup of vegetable broth
- Italian Seasoning
- Garlic Powder
- Salt
- Pepper
- Seasoning Salt
- 1 tbsp Olive Oil
- 1 pack of 9 oz Tortellini
- Olive Oil
- Salt
- 1/2 cup of Three Cheese shredded cheese mix (for garnish)
Instructions
- In a large pot heat condense tomato soup and tomato paste with 1 cup of vegetable broth in Medium-lo. Ensure you do not heat higher than medium-lo, because the mixture heats fast and will burn quickly.
- Add in Italian Seasoning, Garlic Powder, Salt, Pepper, Seasoning Salt, and Olive Oil to heated mixture.
- Pour in heavy cream and reduce heat to Lo.
- Prepare Tortellini as per package instructions, insuring you add salt and olive oil to pasta water.
- Drain pasta and add to soup mixture, stir and cover for 15-20 minutes.
- Serve in a bowl and top with cheese.
