I love a good, hearty tomato soup, especially this time of the year. I’ve seen so many good recipes for soups lately and had to give this one a go. This recipe has my favorite pasta, Tortellini; three cheese at that! It’s a smooth and creamy consistency with a delicious jolt of tomato tang and flare.

My entire family absolutely loved this soup. Even though I made a potful of it, it barely lasted one night in my house. My husband actually asked for some the next night, not knowing the last half serving was eaten by me at lunch the next day. He was sorely disappointed that the soup was no more. I’ll definitely be making this soup again before the winter runs it course. I’m thinking the next time, I might add some diced tomatoes for extra heartiness!
